Delicious Phad Thai
After coming back from Thailand, I was craving Thai food like there was no tomorrow… I just can’t get enough of it. Spicy, sweet, fresh… Yum!! How to solve this craving? I decided to give it a go, and make some on my own and see how it turned out. I watched a Thai lady in a tiny wooden boat make a plate of it every 2 minutes from a huge wok while floating in a canal, so it couldn’t be that hard could it?
My first attempt was wonderful, and cheap to make too. So I thought I’d share the simple recipe that only takes a few minutes to make.
Phad Thai Recipe
Ingredients:
- 8 oz Thai rice noodles
- 3 T Olive oil
- 1 clove garlic, minced
- 3 eggs
- 4 T fish sauce
- 1 green onion cut
- 2 T sugar
- 1 tsp paprika
- 1 Cup bean sprouts
- 1/4 Cup ground peanuts
- Optional (chicken, shrimp, beef, tofu)
If you are adding chicken or beef, you may want to precook the cut up meat first.
In a large bowl, soak rice noodles in warm water for 30 minutes until tender but firm. This can be done while you are preparing the other ingredients and starting the cooking process so that by the time you are ready for the noodles, they are ready for you.
Heat oil in a large frying pan, then add garlic. Let the garlic cook for a few minutes. The length of time you cook it here will determine how garlicky your dish turns out.
Add eggs and scramble until done.
Drain rice noodles and add to egg mixture. Stir fry noodles until they are translucent, adding water if needed.
When rice noodles begin to stick together, add fish sauce, sugar, paprika and green onion. If adding meat, do that here also.
Continue to cook mixture until relatively dry.
Garnish with bean sprouts and peanuts.
